| Carbs Without The Calories If you like hash browns you may like to try this alternative to using potatoes. Summer Squash is a vegetable widely available throughout the year and tastes a lot like potato when cooked, but has a fraction of the carbs.Just grate the Squash and mix in an egg and a little dried onion and make patties. Fry them in a small amount of olive oil and voila, a tasty alternative. You’ll reduce the amount of carbs by about 15 grams (60 kcal). It won’t be as firm and crispy as the potato hash browns, but they do have the potato flavor.
